Lettuce and Equality

A recent article in the opinion section of the  Washington Post focuses on the all-American hamburger, that icon of July 4th eating, and how its components are hardly produced in the spirit of the forefathers’ economic views of free enterprise, fair price, opportunities to prosper and equality. Read on to find what author Tracy McMillan claims are the economic realities and unsustainable sources of beef, buns, tomatoes, onions and lettuce that reveal  “what a simple hamburger says about our nation’s ideal of freedom and enterprise.” Through her research as an investigative reporter, she illuminates some inequalities of the sources of the popular hamburger.

  1. The reason the fast-food hamburger tastes good is because it’s convenient. And convenience is the best tasting thing going. Every day in America it’s people eating convenience: convenience, convenience, please pass the convenience…. But lordy it’s fattening. Look at us. Too fat and tired out to grow, pick, cook and eat peas.

  2. The reporting isn’t especially investigative. Most cattle are slaughtered in four specific slaughterhouses because the bar is so high. It’s an expensive standard to meet. That bar is set, opposite to the author’s implication, by the government. It’s not private enterprise keeping the options tight. Why would you post to truck your cattle an extra 400 miles if you didn’t have to?
    Anyway, my farm is all about the locovore movement and sustainable living, which has much less to do with meat in the first place.
